{Recipe} Creamy Cauliflower, Garlic and Mozzarella Rice

Behind the scenes of my YouTube Channel not every recipe, DIY or video makes the final cut. Sometimes, there are outright FAILS. Sometimes, the quantities or balance in a recipe I'm testing just doesn't work and sometimes, they're just not that pretty to look at, but taste fantastic, like this one!

Creamy Cauliflower, Garlic and Mozzarella Rice
(A great vegetarian option too... if you eat cheese, that is.)

So why let a great tasting recipe go to waste just because it doesn't look the part?!

4      Cups Cauliflower Pieces
2      Cups Vegeatable Stock
1      Cup Water
1.5   Cups Brown Rice
3      Gloves Garlic, Crushed
1/2   Onion, Diced
1/4   Cup Mozzarella Cheese


  • Cook your rice and set aside
  • In a saucepan, combine your stock and water and bring broth to the boil
  • Add in the cauliflower and boil until tender
  • Drain and mash or blend and set aside
  • In a frying pan, sauté your garlic and onion in your preferred oil/butter
  • Add your rice into the pan
  • Pour over the cauliflower mix
  • Simmer until most of the liquid has reduced off leaving a creamy, risotto like texture
  • Stir through mozzarella until melted and serve

Another one of those recipes that tastes MUCH better than it looks!
