{Recipe} Mozzarella Rice Balls

Of all the things I have bread crumbed and fried, these turned out the best! The golden colour, they kept their shape and were just as delicious as I had imagined!

Whip out that Sushi Rice at the back of the cupboard and make yourself some Mozzarella filled Rice Balls! Keep Reading to find out how....

2     Cups Cooked Sushi Rice (1 Cup dry Sushi Rice makes 3 Cups cooked Rice)
1/2  Cup Parmesan Cheese
3     Eggs
       Mozzarella Cheese (In whatever form you can get your hands on)
1     Cup Bread Crumbs
       Oil for deep frying
       Favourite Dipping Sauce for Serving


  • First things first, cook your Sushi Rice. The best way is to follow the Sushi method on the back of the packaging which will normally involve rinsing well until the water runs clear, placing in a saucepan and covering with 1 1/2 times the measurement of rice you're cooking. Bring to the boil then turn down to simmer for 15 minutes and then remove from the heat and let rest with the lid on for a further five
  • Turn your cooked rice out into a non-metallic bowl (glass or plastic) and add in some finely grated Parmesan Cheese, 1 egg and mix well
  • Grab another couple of bowls and in one, beat together your remaining two eggs. In the other, your breadcrumbs
  • Grab a handful of your rice mixture and squeeze it together into a ball shape. Squish it down flat and place in a piece or ball of mozzarella into the centre. I only had grated mozzarella in the fridge, so I simply used my hands to create small round balls
  • Fold the rice back over and around the cheese and form your ball shape again
  • Next, roll it in the egg mixture and coat with a generous amount of breadcrumbs
  • While you're rolling the other balls, get a pan onto the heat and start warming your deep frying oil
  • When you're oils hot, place in just a couple of rice balls at a time and fry, turning as needed until golden brown
  • Straight out of the pan sprinkle over a little salt and serve hot with your favourite dipping sauce
