{Recipe} Feijoa Loaf

It intriques me that the oddly delicious Feijoa chooses to fruit during one of the coldest times of the year to be traipsing around outside collecting it's glorious creations.
Never the less, once the tree starts dropping bucket loads of ant attracting fruit, there's nothing else for it but a Feijoa baking session.... cue Feijoa Loaf.

Feijoa Loaf Recipe
1      Cup Peeled and Diced Feijoa Pieces
1      Cup Sugar
50g  Butter
1      Cup Boiling Water
2      Cups Flour
4      Tspns Baking Powder
1      Egg


  • To start, pre-heat your oven to 180c
  • In a saucepan over a medium heat, combine the feijoa pieces, sugar, water and butter
  • Bring to the boil then turn down to a slow simmer for 5 minutes
  • Remove from heat and allow to cool
  • To your wet mixture, add in the flour, baking powder and egg
  • Mix until just combined
  • Grease a loaf tin and bake at 180c until a skewer removes cleanly (around 50 minutes)
