{Recipe} Zucchini Parmesan Chips

I was trying to figure out what these tasted like. Cheese Sticks! So if you like cheese sticks, you'll love this healthy vege crisp!

Ingredients:
2x    Zucchini / Courgettes
1/2   Cup Flour
2      Eggs
1/2   Cup Parmesan Powder
1      Cup Breadcrumbs
        Oil for frying



Steps:
  • To start, thoroughly wash the zucchini as we'll be leaving the skins on for this recipe
  • Next, slice into thin rounds
  • To create the crispy breadcrumb shell, you'll first need to beat the eggs
  • And in a larger bowl, stir the parmesan into the breadcrumbs and mix to combine
  • Next, in a small saucepan, bring enough oil up to frying temperature that the vegetables will float when placed in the pan. While this is heating up...
  • Roll your zucchini rounds in the flour on both sides before dipping in the egg mixture (a bit like how you would prepare battered fish)
  • Following on from the egg, toss the zucchini in the cheesy breadcrumbs and make sure both sides are thoroughly coated as this is the mixture that will create the crispy outer shell
  • Once your oil is heated, place in 3-4 zucchini rounds at a time and allow to fry for around 6 seconds on each side. Use a utensil that allows any excess oil to drain off as you remove them from the pan
  • Serve warm with a dipping sauce that takes your fancy, I've used a really yummy Parmesan Caesar Dressing and share... or not ;)
