{Valentines} Strawberry Balsamic Eton Mess Recipe

3     Egg Whites
1/2  Cup Sugar
       Pinch Salt
1     Cup Strawberries
3/4  Tspn Balsamic Vinegar
       Greek Yoghurt


Home Made Meringue
  • Pre-heat your oven to 120c (250f)
  • Line a baking tray with baking paper and place to one side
  • Separate your eggs. We only need the whites and the slightest bit of yolk can really throw a meringue off so, the easiest way to do this is to use two bowls. Separate the whites into one bowl, before adding each white to your main mixing bowl
  • To the whites, add the pinch of salt 
  • Beat the whites until they start to thicken and start slowly and gradually adding in the sugar
  • Keep beating until your whites form stiff peaks and no sugar granules can be felt between your fingers
  • Spoon the mixture onto your lined tray. (These are going to be crushed, so there's no need to look pretty)
  • Before placing in the oven, reduce your oven temperature to 90c (195f)
  • Bake for 1.5 - 2 hours until the outside of the meringue is no longer sticky
  • At this point, turn the oven off and leave the meringue in there until the oven is cool
Dishing the Eton Mess
  • Crush your meringue into chunky crumbs
  • Flatten your strawberries beneath a fork to release the juices and slightly crush the fruit
  • To the strawberries, mix through the balsamic vinegar
  • In your serving glass or bowls, add a layer of crushed meringue,
  • Next, a layer of greek yoghurt followed by a drizzle of melted honey
  • Finally, a layer of the balsamic strawberries
  • Repeat the layers to the top of the serving glass and serve immediately before the liquid of the strawberries start to mix with the other layers
