Homemade DIY Muesli Bar Recipe

If you have previously read my Homemade Breakfast Muesli Recipe, then this is the perfect recipe to try next, making use of any left over seeds, cereal and dried fruits.


Ingredients:
1 Cup    Rolled Oats
1 Cup    Desiccated Coconut
1/2 Cup Wheat Bran
1 Cup    Seeds (I've used Pumpkin, Sunflower and Pine)
1 Cup    Dried Fruit (I've used apricots and what else, but cranberries!)
125g     Butter + extra for greasing your dish
1/2        Cup Honey
1/3        Cup Brown Sugar

Steps:


In a frying pan, combine together your rolled oats, coconut, bran and seeds
  • Dry roast over a medium heat whilst constantly stirring until golden brown. You'll be able to smell when its done
  • Remove form the heat, mix through your dried fruits and allow to cool to one side
  • In the dish you'll be setting your muesli bars in, brush over a generous amount of melted butter and place this to one side where it will be easy to grab, as soon as our binding honey mix is ready
  • To make this, in a saucepan combine your butter, sugar and honey and stir until all has melted and the sugar has dissolved
  • Then, turn down to a simmer and leave to bubble for around 5 minutes
  • When ready, pour over your oat mixture and quickly mix through
  • Turn the muesli out into the dish you greased earlier and firmly pack the mixture down
  • Allow to cool and set before cutting
Kept in an air tight container, these muesli bars should last the week
