Pearl Couscous Salad Recipe

Salad Ingredients
250g Pearl Couscous (or 2 Cups Cooked Pearl Couscous)
1/2    Red Onion, Diced
1       Cucumber, Diced
1/4    Cup Apricots, Diced
1/2    Cup Raisons
1/2    Handful Fresh Mint Leaves, Finely Diced

Salad Dressing

Greek Yoghurt
Lemon Juice


  • Making pearl couscous is a bit like making risotto, first, the pearls needs to be lightly fried in hot oil, then the water is placed in and brought up to a boil. (For the exact amounts, follow the instructions on your packet) Once at a boil, bring down to a simmer and cover for 7-8 minutes. You'll need to stir the mix every 2 minutes. If at the end, just a little moisture remains, remove from the heat and keep the pot lid on for another minute allowing the couscous to absorb it
  • Grease a tray and lay your couscous out to cool, lightly forking the mixture through to fluff it up every few minutes as it cools, this will prevent clumping and sticking together
  • While cooling, prepare your other ingredients which are all pretty self explanatory
  • For the cucumber however, cut this down the centre, end to end and gently scoop out the seeds using a small teaspoon and cut the remaining, hard flesh. This way, your salads won't get soggy! 
  • I was preparing mine ahead of time so with my dressing, mixed the yoghurt, lemon and honey together but also added the mint so while it was chilling, would infuse into the dressing which I mixed through just before serving
