{Healthy Eating} Chicken Pita Pocket Recipe

The mixture of these flavours cannot be faulted and I just know you'll love this combination just as much as we did.

Here's what you'll need:
SERVES 4

Chicken Marinade
2 Boneless, Skinless Chicken Breast (400g in total)
2 Tbsp Olive Oil
2 Tbsp Honey
1 Tbsp Balsamic Vinegar
1 Clove Garlic, Crushed or Finely Diced

Pita Pockets
8x Pita Pockets
1/2 Cucumber, Diced
1/2 Red Onion, Diced
1 Tomato, Diced
1 Can Black Beans, Drained
1 Avocado, Diced or Sliced
3 Tbsp Leafy Parsley
1/2 Cup Cheese, Grated
1/2 Cup Hummus (I used roasted carrot flavour)

Steps: 
  • First things first, hours before you plan to cook even, you can prepare your chicken and get this marinading. The longer this can rest, the better
  • Into a bowl, combine all your marinade ingredients over your chicken slices, your honey, garlic, vinegar and olive oil
  • Cover and chill until ready to cook
  • Later, while this is cooking, you simply need to prepare your salad ingredients
  • And, you'll want to warm or lightly toast your pita pockets
  • Then its simply a matter of everyone making their own pita pockets to taste
