{Healthy Eating} Fish and Couscous Parcels

There's something so easy about parcel cooking. Less mess, less hassle. Pop it in the oven and walk away. It certainly makes eating healthy more enticing and who doesn't love opening up a steamy hot parcel filled with fresh fish, vibrant greens and warm cherry tomatoes that pop in the mouth.

Here's what you'll need:
SERVES 4
250g Uncooked Couscous
3 Spring Onions, Diced
1 Lemon (or Lime), the Zest of and sliced into rounds
1 Tspn Cumin
2 Tb Leafy Parsley (or Coriander), Diced
12 Cherry Tomatoes, Halved
4 Fresh Fish Fillets
Extra Virgin Olive Oil
500g Boiled Water
Aluminum Foil

Steps:
  • Place your dry couscous, spring onions, zest and cumin in a large mixing bowl
  • Cover with half of the boiled water and mix through well before adding the second half
  • Cover and leave for 10 minutes to absorb the moisture
  • Gently fluff the couscous mix with a fork before stirring through the parsley and tomatoes
  • Place a fourth of the mixture onto each sheet of aluminium foil
  • Cut larger fish fillets in half and lay on top of your couscous mix
  • Top the fish with slices of your lemon or lime
  • Take the ends of the foil and roll these together, pinching the sides in as you go to create a hot pocket. Leave space at the top for the steam to collect
  • Bake at 200c (390f) for 20 minutes
  • Serve parcels straight from the oven
The fish will steam so tender it will flake away from the fork, the tomatoes warm through and the extra water added to the couscous will after baking, leave a fluffy side dish to accompany this filling fish dish.
