{Healthy Eating} Cauliflower Bake Side Dish

I had been keen to try a cauliflower bake for a while now and while it was delicious, I would have to say, i'd file it away more as a side dish, rather than a main meal which, is a fair assessment after eating two and half large sized bowls of it in one sitting for dinner.

It could certainly be made more substantial by the additional of perhaps some sliced sausages as well and some more colour from something like capsicums (bell peppers). As far as the recipe below goes however, I would certainly recommend you don't leave out the garlic. It plays a crucial part in the flavour combination.

Here's what you'll need:
SERVES 6 (as a side dish)
1 VERY large head of cauliflower (or the equivalent of)
1/4 Cup Sour Cream
1/4 Cup Natural Greek Yoghurt
25g Butter
2 Spring Onions, Diced
2 Cloves Garlic, Crushed or Finely Diced
400g Bacon Bits
1 Cup Grated Cheese

  • To start, dice your entire cauliflower into small pieces
  • Place this into a microwavable dish as is (no water) and cover
  • Pop into the microwave for a start of 6 minutes. After this, assess if more steaming is required
  • While this is cooking, in a little oil, fry your bacon until it starts to show some colour
  • Once the cauliflower is steamed, place into a large mixing bowl
  • To this, add the butter, sour cream and yoghurt
  • Then your garlic and spring onion
  • Mix through before folding through the bacon
  • Place this into an oven dish and top with the grated cheese
  • Bake at 210c (410f) until the cheese has melted and browned on top
